Dairy Free Beef Stew
Ingredrients:
3 tbs.veg oil
1 large onion,diced
3-4 cloves of garlic,crushed
1 cup diced tomatoes
1 tbs.tomato paste
1 tbs.flour
1-1/2 lbs.cubed beef chuck
3 medium all purpose or red potatoes,cut into 1 inch cubes
2 medium carrots,sliced
2 stalks of celery,sliced
1 cup of mushroom,quartered
3-1/2 cups of water or stock of your choice
salt & pepper
1tsp paprika, 1/2 tsp oregano, 1 tsp thyme
Sautee onions in veg oil in a large pot, add the beef and cook until brown,add flour, stir well, add tomato paste and the diced tomatoes,mix and cook for 2 minutes, add the water or stock, bring it to a boil. Add the veggies and salt, pepper and the spices. Keep your eye on the pot, when it starts boiling again lower the heat and close the lid. Let it cook for 1 or 1 1/2 hr. Serve. (You can adjust the consistency of your stew by using more or less stock.)
